And NOT Humm-us (that's how hummus (or hommos),the Middle Eastern garbanzo bean & tahini spread) is (properly) pronounced, and spelled, i.e. double 'm'.

Pronounced HUGH-mus, the same way that that very most resistant, fertility crucial & increasingly rare fraction of soil organic matter is pronounced.
